A station is a place or machine: mixer, bench, oven, counter. Capacity is how many tasks it can take at the same time.

How to run a team with this plan
- Split the day into blocks. Opening, shaping, orders, tomorrow’s prep, closing. Each block has a start, an end and a lead.
- One name on every task. “Someone mixes the baguette” means nobody does. If a task needs two people, it asks for two names.
- Queue the bottleneck. Most small bakeries have one mixer and one oven. Put their tasks back to back; the plan warns you when two land at once.
- Stagger the breaks. Never two people from the same station at once, and write who covers the counter.
- Prepare tomorrow today. Preferments, fridge doughs and toppings belong in the afternoon plan, not in tomorrow’s rush.
- Close with a handover. Five minutes: what’s proofing, what’s short, what broke. The next shift starts from there.
- Put it on paper. Print the wall sheet for the bakery and a card for each person. Tick tasks off as you go.
